Last week, I found myself with leftover ingredients and tortillas that needed to be used ASAP. So I did the only thing sensible: I made homemade frozen burritos. I really wanted to make a healthier alternative to the store bought frozen burritos with refried beans, cheese, and who knows what else. So here is my take on frozen burritos!
I mixed corn and peas together to add a light sweetness to the filling.
A bunch of black beans for fiber, protein and iron!
Grilled chicken lightly seasoned with salt, pepper, red chili powder. I shredded it after it cooled.
I had some leftover brown rice which I turned into a quick mexican rice. Olé!
I lay each flour tortilla on a piece of aluminum for easy wrapping AND easy baking when I want to pull it out of the freezer. Just pop it into the oven (375 degrees for 25-30 minutes).
I filled it with a couple of tablespoons of each. I also added some spinach and cheese before I wrapped each into this neat burrito! I don’t mix the cheese with everything because I like there to be a thin and separate layer of cheese.
After you roll it up and freeze it, you can pop it into the oven with the aluminum foil still intact (again, it’s 375 degrees for 25-30 minutes). I place the wrapped and frozen burrito onto a baking pan. It helps to crisp the tortilla.
